The Case for Universal Celiac Screening

Researchers at the Children’s Hospital in Colorado have released findings that support mass screening for celiac disease in children.

In the past, doctors have been hesitant to mass screen children for celiac because they didn't understand if it would improve or hurt a child's quality of life.

Researchers followed 52 children who were mass-screened and tested positive for celiac disease as part of an initiative called Autoimmunity Screening for Kids (ASK).

After one year, the children with celiac disease identified through ASK demonstrated improved symptoms, a better quality of life, and normalized iron levels.

These findings surprised me. I had a hunch that kids would experience improved symptoms, but I did not expect them to experience an improved quality of life, too.

I imagine it's hard for kids with celiac disease. They are often left out of many social situations and aren't always equipped to advocate or fend for themselves.

But maybe this upcoming generation of kids is better equipped than my generation. I definitely feel like celiac disease changed my life in so many ways. Some for better, but some for worse.

My Visit to Via 313 Pizzeria πŸ•

I rarely eat pizza outside of the home due to cross-contamination AND the high risk of airborne flour, which is a legitimate concernβ€”read more.

However, I went against my norm and decided to give Via 313 Pizzeria a try upon the recommendation of several people who nudged me after I POSTED THIS ON INSTAGRAM.​

Via 313 makes Detroit-style pizza, which is rectangular-shaped pizza with a doughy center and crispy crust.

Here are a few things to note before eating at Via 313:

  • My waiter told me they make the gluten-free dough in the morning before the regular dough.
  • They prepare and cook their gluten-free pizzas in a separate area, albeit still a shared kitchen and oven.
  • They charge an extra $4.50 for the gluten-free crust (and it's another $4.50 for dairy-free cheese).
  • My plain cheese pizza (which was pretty small) cost $18.50 + tax and tip.
  • They use gluten-free wheat starch.

Remember, gluten-free wheat starch is safe for people with celiac disease, but if you react to it, it might mean you have a wheat intolerance (not just a gluten intolerance).

The pizza was really good, and most importantly, I didn't get sick.

I also appreciated seeing a toothpick in my pizza. Nice touch!

Summer β˜€οΈ Desserts

Asking me my favorite summer dessert is like asking me to choose a favorite child.

While I don't have a favorite, I do have many favorites that I make in regular rotation.

One dessert I'm loving right now is my Raspberry Dessert Bars.​

They're sweet and tart and have a wonderful flaky crust. You could make them with strawberries, too.
