I recently posted an Instagram Reel that struck a nerve with our community. It's received over 100k views and I think it says exactly how so many of us feel.

I said that the hardest part about being on a medically necessary gluten-free diet isn't the food; rather, it's:

  • Feeling like you have to justify and explain yourself.
  • Worrying about getting glutened at inopportune times.
  • Lack of spontaneity.
  • Feeling like you're a bother for needing special accommodation.
  • Having your food choices judged by people who don't understand the mental gymnastics of following a strict gluten-free diet.

I Ate at Casa Bonita and Survived

Have you heard of Casa Bonita? It's an iconic "restaurant" in Colorado with notoriously bad food.

It's been around for ages but was purchased in 2021 by the creators of South Park, Matt Stone and Trey Parker. The duo renovated the restaurant, making it a must-see attraction for Coloradans and visitors alike.

The pink castle offers strange amusement park-like attractions. But of course, I was there to check out the food.
