My Cosmic Birthday 🌖

Are you excited for the total solar eclipse on April 8th?

It looks like Denver will only get 65% of the eclipse coverage, but that's enough to motivate me to take a peek.

But the "real" news on April 8th is that it's my birthday. The stars have aligned just for me!

In honor of my 21st birthday 😉, I wanted to share a few of my favorite birthday recipes with you:

(1) These Classic Vanilla Cupcakes have a delicate crumb and luscious frosting. They're also so cute.

(2) As you know, you can't walk into the grocery store and order a simple sheet cake for your birthday. So I recommend making my Chocolate Sheet Cake instead. It's infused with hints of coffee.

(3) Don't want cake? This Giant Cookie Cake is festive and fun and is always a joy to decorate!

A New Breakfast Recipe

I thought I would balance today's sugary newsletter with a savory dish as well.

My NEW 30-Minute Gluten-Free Shakshuka recipe uses only simple ingredients.

I think you'll love the smoky and savory tomato sauce filled with loads of veggies and perfectly poached eggs. YUM!

Holidaily, a gluten-free brewery based in Golden, Colorado, announced this week that it will now have statewide distribution in Oregon and Washington. I'll drink to that! 🍻

New GF Bakeries

I learned of two new bakeries this week: Haley's Donut in Hoboken, NJ, and Conscious Comforts in Omaha, NE.

I added them both to my list of 300+ Gluten-Free Bakeries. This list keeps growing and growing!
